Your Host – Marcus Darley
Marcus’s 35-plus years in the hospitality industry started when he set up and managed several pubs, bars and restaurants for Lion Breweries, Wellington. In 1990, Marcus, Tim Harding and the late Dean Dunlop opened Brassiere Flipp, which they ran for twelve successful years.
The Wairarapa gained a fantastic hospitality professional in 2001 when Marcus moved to Martinborough and then Greytown where he helped set up The White Swan and tutored at hospitality and catering schools in the Wairarapa and Wellington. In 2004 Marcus purchased the Tin Hut, a venue where he can indulge his passion for hospitality, express his creativity in the interior renovations and developing gardens, nurture animals, vegetables and herbs whose produce support his philosophy on eating well with locally produced food.
